- Remove scallion from chicken. Heat oil. Fry chicken until golden brown on both sides. Approximately 3-4 mins per side.
- Remove half the oil from pan. Put red and green pepper, scallion and onion in oil to fry. Onions will be translucent. (I sometimes add minced garlic to this part as well for extra flavor.)
- Add thyme, hot pepper sauce, ketchup, habanero and 1 cup of hot water and salt. Let this simmer for 5-10 mins. Taste for flavor. You may need to add more salt. Or other seasonings of your choice
- Add chicken to gravy. Add remaining cup of hot water and turn heat on low. Cover pan and let cook for 30 minutes or until tender and gravy thickened
- Serve with rice or veggies.
